Busiate (or busiati) are an ancient type of pasta, originally from the province of Trapani, and typical of Sicily.

The name derives from its twisted shape: in the past, the strips of pasta were rolled up on a branch of "buso", the stem of a plant called "ampelodesmo", a grass typical of arid Mediterranean soils.

Busiate (oder Busiati) sind eine alte Nudelsorte, die ursprünglich aus der Provinz Trapani stammt und typisch für Sizilien ist.

Der Name leitet sich von seiner verdrehten Form ab: Früher wurden die Nudelstreifen auf einem Zweig des „Buso“ aufgerollt, dem Stängel einer Pflanze names Ampelodesmos mauritanicus, einem Gras, das für mediterrane Trockenböden typisch ist.
