Alberto Poiatti's Orecchiette 87 bring to the table one of the most typical shapes of Southern Italian cooking, linked above all to the tradition of Apulia. The name comes from the shape: a small disc of pasta hollowed in the centre, which resembles an ear.

There are just two ingredients, durum WHEAT semolina and water, and the pasta is suitable for a vegan diet. The small hollow collects the sauce and holds it, so in every mouthful you find a little sauce, whether tomato or vegetable.

500 g pack. Cook them in plenty of salted water and drain them al dente, following the cooking time on the pack. Try them with turnip tops, the most classic pairing, with a tomato sauce and ricotta salata or with vegetables sautéed in a pan and a drizzle of extra virgin olive oil. Store them in a cool, dry place, away from sources of heat.
