Mezze maniche | Etna

Alberto Poiatti's Mezze maniche Etna are a short pasta shape much loved in home cooking. The name describes their shape well: short, wide tubes, like sleeves cut in half.

The recipe is simple: just durum WHEAT semolina and water, an essential pasta that leaves all the room to the sauce. The short, wide tube shape collects the sauce inside and holds it on the outside too, so every forkful stays well coated, with both the simplest sauces and the richest ones.

500 g pack. Cook them in plenty of salted water and drain them al dente, following the cooking time on the pack. They are excellent with a tomato and basil sauce, a ragù or seasonal vegetables, and you can also use them for a pasta bake. Store them in a cool, dry place, away from sources of heat.
