Pennoni | Etna

Alberto Poiatti's Pennoni Etna are, as the name suggests, large-format penne: a wide tube of pasta with the classic diagonal cut at the ends, which stands out on the table.

The recipe is simple: just durum WHEAT semolina and water. The generous size is the strength of this shape: the sauce gets inside the tube and coats it on the outside too, so every mouthful carries a good amount of it. That is why Pennoni are at their best with rich, flavoursome sauces, the kind that call for a substantial pasta.

500 g pack. For cooking, follow the time on the pack and taste them before draining: they should stay al dente. Try them with a meat ragù, with a tomato and aubergine sauce or with mushrooms and sausage; they are also perfect for a pasta bake au gratin. Store them in a cool, dry place, away from sources of heat.
