Pasta alla Norma: Use the sauce to dress pasta, preferably rigatoni or spaghetti. Complete the dish with a generous grating of salted ricotta for an authentic Sicilian flavour.

Gnocchi con Sugo alla Norma: Mix the sauce with fresh gnocchi and serve with fresh basil and a drizzle of extra virgin olive oil.
