    Prepare it as follows

    • Place the amount of cous cous you need in a bowl and season with a little oil, salt and pepper to taste.
    • add a little at a time some hot vegetable stock, which you have prepared beforehand, stirring until you reach the desired consistency
    • cover the bowl with cling film and leave for 5 minutes (until the cous cous absorbs all the liquid)
    • now gently mash the couscous with a fork and it is ready

    Cous cous is a dish that finds one of its richest and most varied expressions in Sicilian cuisine, where it is known as 'Cous Cous alla Trapanese'. This traditional recipe from western Sicily combines cous cous with an aromatic fish broth, making the dish incredibly tasty and a perfect example of how sea and land meet in Sicilian cuisine.

    Cous Cous makes an ideal base for nutritious salads. Add cherry tomatoes, cucumbers, olives, feta cheese and a touch of mint for a fresh summer salad. Dress with lemon and olive oil for a light but satisfying lunch.
