Sage, known scientifically as Salvia officinalis, is a perennial shrub belonging to the Labiatae family. This plant is distinguished by its erect stem, which can reach a maximum height of 70 cm, and by its lance-shaped, long, tapered leaves with a thick, hard texture.
It flowers in spring, sporting beautiful flowers ranging in colour from blue to purple, and prefers sunny exposures. Typically Mediterranean, sage has a life cycle of around 5 years, after which it needs to be renewed.
The name 'sage' is derived from the Latin 'Salus Salvus', meaning 'healthy and safe', a tribute to the plant's well-known beneficial and health-giving properties. Historically, sage has been held in high esteem by various cultures: the Gauls believed it could cure all illnesses and act as a remedy against fever and coughs, while the Romans worshipped it as a sacred plant, harvesting it according to a solemn ritual involving sacrifices and special clothing. The Chinese also attributed sage with the power to prolong life, so much so that in the 17th century Dutch merchants exchanged a basket of sage leaves for three baskets of tea.
Today, sage continues to be appreciated not only for its healing properties but also as an aromatic herb in the kitchen, where it is used to flavour a variety of dishes, imparting a unique and unmistakable taste.

Usage
Sage is one of the most popular herbs in cooking and a natural remedy with many beneficial properties.
Meat and Fish: Sage is particularly suitable for seasoning fatty meats such as pork and lamb, due to its intense aroma that balances the rich flavour of the meat. It is also excellent with fish, especially salmon or trout, where the leaves can be placed inside the fish before baking or grilling.
Sauces and Aromatic Butters: Sage can be used to prepare a flavoured butter by melting butter with chopped sage leaves. This mixture is excellent for seasoning fresh pasta, such as gnocchi or ravioli, and for flavouring sautéed or steamed vegetables.
Infusions and Herbal Teas: Sage leaves are ideal for preparing herbal teas and infusions. A sage infusion can help soothe a sore throat, relieve cold symptoms and aid digestion.
